What should be done when changing all the file names, images and styles to some site?
Just delete and then upload the new ones and then wait?

Make sure to add 301 redirects from old file names to new file names! In time, everything will be settled!

Another important point I heard mentioned at the SES conference is that if you have the same image names as before, that'll lessen the chances of your site being not included in Google while the changes are being reviewed.

I have changed the structure of the site, the site presented 3 activities, but now it remains just one, all the file names were changed, including grafic files. Should I do 301 redirects from an old file that discuss web designing(like web-design.php) to the new one that is sounds.php? What Google will think about?
