Does anyone have any SEO's that they recommend for a website in the Travel industry? My company is thinking about outsourcing our SEM but I am trying to find a list of companies to get proposals from.

Here is a small list of SEM companies that you can call.
www.iprospect.com
www.oneupweb.com
www.bruceclay.com
www.seoinc.com
www.acsseo.com
www.keywordranking.com
www.highrankings.com
www.submitawebsite.com
www.icrossing.com
www.360i.com
www.newgate.com
I think that all depends where in the world you are! :)
I'm in the UK so I'd ask Google News this: http://news.google.com/news?hl=en&ned=&q=search+engine+optimisation+travel as it'll show me which big brands are talking publicly about travel.
In the US I'd swap the spelling to: http://news.google.com/news?hl=en&ned=&ie=UTF-8&q=search+engine+optimization+travel
And I'd swap around keywords too; SEO, internet marketing, etc instead of spelling out "search engine optimisation" (which I tend to go for first as the holy grail of ability) and hotel, airlines, etc, as required for your travel keywords.
On the other hand you might be tempted to find a good SEO that doesn't already have any travel clients.
