How many sub domains are too many, ie.

shoes.domain.com
boots.domian.com
skates.domian.com
slippers.domian.com
and so on.

I might have 15 or so but all different content for them along the same theme thou.

number of subs is not a problem especislly since you have different copy

Each subdomain is treated as a separate site. Just as you can have as many websites as you like, you can have as many subdomains as you wish.

As long as you are not putting duplicate content on these subdomains, everything should work fine.

For some ranking factors if domains and sub domains have same IP (dedicated IP) they are treated as same site :) - An uncommon tip

For me subdomains really work great. I would prefer sub domains for an ecommerce site.
