Does the quality of scores of keywords just affect the ad group they are in or do they affect the entire campaign? So if have ad group that is really under performing and is deleted, are future ad groups going to be affected?

Short answer: Yes
Long answer: The QS calculation is complex, and takes many factors into account, and only Google knows the details. However, one of the factors is the past performance history of a keyword. So, if you used a keyword in past campaigns, its performance history may spill over and impact new campaigns - even if the past campaigns have been deleted. In this respect your past history can effect your current performance.

What I've learned from my own experience running my own Adword campaigns is that if you maintain a well designed landing page with keyword rich content your quality score will be good for those keywords.. Also, make sure you have the targeted keyword(s) in your Ad text..

How do you maintain a landing page with keywords?
but I have maintained a very good landing page with the keywords but still no performance????????????

Really?? No performance??
I am new in this hotel industry and working on google for the past six months but the average conversion numbers are really surprising me. I get 2 or 3 conversions on an average with huge cost. I am focusing on the relevancy of ad text, keywords and landing page but still nor performance?????
One more question about the ad text/////////
changing the ad text regularly make any impact on the keyword quality score???????? as I am doing that with my account.

Wish, it sounds to me like there are issues with your landing page(s). If you are getting good traffic, but no conversions, that's usually where the problem lies.

Oh thats tough in you don't get any conversion.. Its also tough if those potential customers don't browse your website..
