I wrote a quick blog post this morning about seven things to think about when looking for a seo-friendly web host.
The seven items that I came up with are:
1) Personal Phone Support (for adding 301s, reboots, etc).
2) Having a Host that's Aware of SEO Technologies (Blogs, Wikis, etc).
3) Reseller-Related Issues
4) Data Center Geography
5) IP-Related Issues (adult content, spam, etc).
6) The Host's Customer Base
7) Log File Access

Is there anything else that you guys look for? One thing I probably forgot was shopping-cart access, and the ability to make changes to the cart pages/landing pages.
I've had customers come to us for SEO services that have had really strange relationships with their hosts. I think a lot of problems can be avoided by picking carefully.
