How do you accurately determine the daily search demand, competition and KEI metric for seasonal search terms such as Easter?
Tools like Wordtracker are set to produce an average for the last 90 days, but Easter and other holidays are only big for a week or two.
Any help is hugely appreciated.

First of all, I don't believe there is such accurate figures when determining the volume of search.
I use Keyword Discovery to determine the trend of a keyword query and it returns the trend for the whole year.
The problem I have is that it only produced the graph and not the exact figures so I can only estimate the number based on the vertical ruler.

Google recently added a new tool with some seasonal data, and there are some other things you can try. SEO Book had a nice write up recently with some tips here (http://www.seobook.com/archives/001598.shtml).

Trellian also offers a tool with seasonal info, http://www.keyworddiscovery.com.
(I believe the seasonality is fairly accurate for the past 6 months or so. However, once they add data sources, the numbers will lift and the seasonality trend will be harder to spot.)
By the way, the tool is very easy to use.
