Wow, surprised no one's answered this.
That's too bad you can only attend one- I go to at least one PubCon a year -Vegas usually, and I really should go to more whenever I can. But I pretty much go to all the major SES shows. Both are great for networking and learning. Somewhat different vibes, as WMW tends to be more technical and webmaster driven, SES more marketing, though both have crossover to the other side.
There's actually a really good thread, Pro's and Con's of SES and PubCon (http://forums.seroundtable.com/showthread.php?t=639) at Search Engine Roundtable.

PubCon is more "technical" in nature--it's better for the hardcore SEO or hardcore webmaster who already has a good handle on "the basics".
SES tends to be good for a newbie who hasn't done much SEO or a seasoned webmaster who needs to brush on "the basics".

Good feedback. I'm the Marketer. Lotsa fluff...but I've been deep into SEO for a couple of years now. I'm bringing a technically minded CEO w/ minimal knowledge of SEO.... Looks like SES, but I'll try to swing both.
THANKS AGAIN-

I went to one day of SES NYC '06, and I just wish that I had been able to stay for the entire conference. I definitely plan on going to the entire event next year, since there is plenty for both "newbies" and seasoned professionals to learn.
I'll be at the WMW PubCon in Boston next week, so I'll stop back in here and give you some concrete comparisons afterward.
