If you change the registrant field, the owner of the domain, Google considers your domain to be new and you start all over.

if you just screwed up the dns etc. the site should return by a couple of days tops

Changing the registrant field, by itself, will not have any effect on your rankings.

Whenever there is a change in DNS name server, the website goes out of phase temporarily for a period of 15-30 days. It is just a natural process. In case you dont see your site coming back to previous rankings after 30-40 days, then it is a matter of concern.
